Vittorio 'Gianni' Capovilla is recognized throughout the world as one of the best, if not the best, distiller in the world, above all for his passion: fruit distillates, rum and grappa. Capovilla defines his delicious grappas as the noble expression of a "poor" product. The Decio di Belfiore apple distillate is a fruit and apple distillate obtained by double-pass distillation in small copper bain-marie stills. Vittorio has made the excellence of the raw materials and the purity of the distillates his true reason for living. The Decio di Belfiore apples are an ancient variety of apples cultivated by the Romans which has currently obtained the recognition of "Presidium of the Italian Slow Food Association" for the Veneto, Verona. The Decio di Belfiore apple is considered one of the most historic and noble varieties of apples and for this very reason it is often called the diamond of apples. The trees generally ripen in the spring, with harvests beginning in July and continuing through August. These are high quality apples, with a sour taste, an intense aroma and a firm and crunchy pulp grown in the Veneto region. Vittorio Capovilla selects only the best Decio di Belfiore apples. The apples are destemmed and fermented as is done with red wines, at the end of the fermentation all the fermented must is distilled. This apple distillate is colorless, limpid and crystalline. The Capovilla distillate of decio di Belfiore fior apple obtained is rich in aromas, perfumes and in the mouth it is an explosion of sweetness. The product rests at least 2 years in stainless steel tanks. It is bottled, diluted with spring water and brought to an alcohol content of 45% vol. no added sugars, flavors or anything else. Tasting notes: Perfumes: The nose denotes intense, clean, pleasant, refined and elegant aromas of apple. Taste: In the mouth it is intense with a barely perceptible alcohol content which tends to dissolve rapidly, excellent correspondence to the nose, pleasing roundness, very balanced. Although the concept of "malted rum" may seem unfamiliar to most rum consumers, it is nonetheless a product that has its roots in 19th century Cuban ronera culture. During those years, the vast majority of ron came from the distillation of sugar cane molasses, with an alcohol content of about 90% at the origin, which was then diluted. With distillation in alembic, on the other hand, aguardienti between 45 and 50 degrees of alcohol were obtained, intended for consumption without further dilution. In the Cubanacan area, later renamed Las Villas, a small and selected group of distillers conceived the production of distillates between 72 and 74 degrees, which were then placed on the market at 42 degrees. The result was a much more delicate and soft rum than aguardienti, but with a fuller and more pleasant bouquet than 90° distillates. This name was given to him by a Greek priest of Hispanic origin, parish priest in the municipality of Las Placetas and a great admirer of the ron in the area. Father Pertika noticed that this new flavor of ron reminded him of the honey of his childhood and since "malt" is the Greek name for honey, he coined the term "ron de malta" for the new product. The original formula of "malt rum" was recovered by Nancy G. de Blank, wife of a descendant of don Juanillo Oliver, great Cuban producer of rum of the 19th century.
