In our workshops we prepare a highly digestible dough thanks to the use of stone-ground flours and the long natural leavening in the pan and we obtain crunchiness and flavor thanks to the mixed use of sourdough and biga yeast and two-stage cooking. For our fillings we always use fresh seasonal vegetables, we do not use chemical additives or preservatives and we promote local micro-companies that produce cured meats and cheeses as they once did. Our product is HEALTHY, GOOD and ITALIAN.
