CAPONATA OF EGGPLANT PALERMITANA
Traditional dish prepared with fried aubergines, capers, tomato sauce, olives and celery. It is one of the so-called "poor" dishes, because it is based on simple and genuine ingredients and, in this case, typically Mediterranean. The Sicilian caponata is characterized by its particular sweet and sour taste, due to a marinade with sugar and vinegar.
