Thirty years of experience

Since 1987 we have been experimenting and innovating, constantly trying to improve the fruit of our work, researching ancient and modern quality flours and improving the technique with which we prepare our Pizza.

Hands on

We are of the opinion that Pizza should first and foremost be synonymous with craftsmanship: since 1987 we have been kneading our bases every day, relying on a recipe that is simple in its ingredients but continually evolving. Continuous experimentation has also allowed us to create a solid identity and a unique product, without however departing from the long tradition that has accompanied our work: we have always used only flour, water, olive oil and mother yeast, making use of a long leavening at a controlled temperature, to guarantee the best result in terms of digestibility.
Flour from our lot
 
The foundation of an excellent Pizza is undoubtedly an excellent flour: for the traditional dough we use the 1R Soft Wheat from Molino Dalla Giovanna , 100% Italian certified and also subjected to washing with water during processing, a process unfortunately abandoned from many mills due to the cost but which guarantees the total elimination of impurities and a refinement of the raw material used. Alongside you will always find a dough based on the prized Ancient Khorasan Wheat famous for its organoleptic properties and excellent taste, together with a wholemeal dough characterized by a low glycemic and sodium index, together with a rich profile of essential micronutrients, particularly suitable for those who prefer a pizza with a rougher consistency and a more intense aromatic profile.

One wonderful thing about Pizza is the great propensity for customization: the combinations of ingredients are almost infinite and every time you can give vent to your creativity by creating new and delicious combinations. For this reason we have drawn up the complete list of available ingredients as a source of inspiration, obviously alongside the proposal contained in the Menu which boasts more than 60 of our creations!
