Delicate and soft whole bunch pressing for most of the production, the remaining part with light destemming by oscillation. It follows a rigorous winemaking protocol: racking for natural sedimentation, slow fermentation at a controlled temperature (14°/18°); aging 6/8 months on fine lees and yeasts. VOL: 12.50% - 75 CL
