THE SCROCCHIARELLA
The Scrocchiarella is a pizza on a shovel. Its processing takes place in two phases: a pre-dough (biga) which will undergo a long and slow leavening in the refrigerator; a second dough joined to the first and further leavening until the finished product is obtained. The mixture of Italmill flours (low gluten content) and the natural mother yeast used make Scrocchiarella a highly digestible, soft and crunchy product .
It is a captivating and tasty pizza with every bite, excellent for sharing with family and friends and on any occasion to celebrate happily!
Unlike classic pizza, Scrocchiarella is also excellent the next day simply by heating it in a non-stick pan with a lid for 5 minutes or in the oven (no microwave). Ideal for a quick and light meal at any time of the day or night.
