Our pizzas
The great passion of Ferruccio Santoni , Master Pizzaiolo , always looking for new tastes, quality and originality have allowed, in addition to the traditional and wholemeal pizza, to merge the new entry the "BIOLEGGERA" pizza
To distinguish ourselves in quality, the dough of our TRADITIONAL pizzas is prepared with a mix of type 00, type 1 and type 2 wheat flours and the yeast is present in minimal terms. It is also essential to give the pizza a very long maturation/leavening period, which allows the pizza to be highly digestible with a particular fragrance.
Alongside the traditional one we have added the WHOLEMEAL pizza made up of a mix of wholemeal wheat flour and 00 and type 1 flour, to obtain a rustic and full flavour, combined with a particular fragrance and lightness.
The BIOLEGGERA pizza is the latest creation created with a dough of organic flours using kamut type durum wheat flour, amaranth flour and millet flour, obtaining a balanced and energetic dough, ideal for athletes and diabetics having a lower insulin response .
Amaranth and millet do not have gluten and therefore allow better digestibility. The taste of the pizza combines the sweetness of the millet with the herbaceous base of the amaranth mixed with the fragrance obtained from the kamut.
